A little more detail…
Apple and Blackberry has long been a favoured pairing featuring together in autumnal recipes. To capture this flavour in our wine vinegar we have referenced many (crumble) recipes to arrive at the ideal balance of berries to apples, sweet to sharp.
Once the first blackberries ripen in mid late august the picking begins and this year we were still at in October, an unusually long season. While there is an abundance of berries in the hedgerows, to get them often involves battling with nettles, thorns, ditches and scratches.
The apples are from our own trees, (gifted as wedding presents many years ago!) sweet eating apples and it is great to be able to use them all up making the vinegar.

Recipe Idea
Marinade for Pork Steaks - would also work well with Cauliflower, Celariac or Beetroot steaks.
4 steaks
3 tbsp Apple & Blackberry vinegar
3tbsp Olive Oil
1 crushed clove of garlic
1 tbsp chopped fresh Rosemary
Salt and Pepper
Place the steaks in a dish. Combine all the marinade ingredients and pour over the steaks mixing well and rubbing in. Cover and refrigerate for at least an hour. To cook, either griddle, fry or roast to your liking.
